Sunflower Seed Hummus

Lower carb and allergy-free alternative to hummus. It can be used as a spread or a dip for veggies!

Ingredients

1 cup raw, unsalted sunflower seeds

 1 to 2 garlic cloves

2 tablespoons raw tahini

Juice of 1⁄2 lemon

Salt to taste 

2 tablespoons extra virgin olive oil

1/4 teaspoon cayenne pepper (optional)

Instructions

1. Purchase sprouted seeds (in store or online). Or can make at home by: Soak the sunflower seeds overnight in a half-gallon sprouting jar . The next day, drain and rinse through the mesh lid until the water runs clear, then leave on the counter to sprout. When the first small sprouts start to form after 8 to 12 hours, they are ready to use.. Rinse and drain the sprouts.

2. Pulse the garlic in the food processor to mince it. Add the sprouted sunflower seeds, tahini, lemon juice, and a pinch of salt. Turn on the food processor and pour the olive oil in slowly, then add another pinch of salt and the cayenne powder. Process until smooth. 

*Note: If you don’t have a food processor, you can use a blender or hand blender.
