Eggplant “Bacon”

An inspired version of bacon with the same flavors. You can use these “bacon” strips in sandwiches, soup, salads, as “bread”, or even just snack on them alone!

Ingredients

1 eggplant (large, peeled and then sliced lengthwise into thin, 1/4 inch thick or less slices)

2 tablespoons coconut aminos

2 tablespoons pure maple syrup

2 tablespoons apple cider vinegar

2 tablespoons olive oil

1 teaspoon chili powder

3/4 teaspoon smoked paprika (adjust to taste)

black pepper (to taste)

garlic (optional)

tomato sauce (optional)

cumin (optional)

cayenne pepper (optional)

mesquite powder (optional)

Instructions

1) Mix all marinade ingredients (tamari through pepper) together. Submerge eggplant slices well, and let marinade for at least an hour.

2) Bake these at 350 for about 18 minutes or until golden, occasionally basting them with marinade.

(Makes about 20 thin slices of bacon.)
