Chocolate Mousse

Creamy and protein-packed mousse that is sure to satisfy that sweet tooth!

Ingredients

1 block soft tofu, drained but not pressed

1/2 cup canned coconut milk

1/4 cup 100% pure maple syrup

1/3 cup unsweetened cocoa powder

2 tbsp nut butter (almond or peanut)

1 tsp vanilla extract

Pinch of salt

Instructions

  1. Place all ingredients in a food processor or blender and puree until consistency is very smooth and creamy. Scrape down sides as necessary while blending.
  2. Divide into 4-6 servings and allow to chill for 30 minutes or more in the fridge.

Note: Top with raspberries or pomegranate seeds for some added sweetness, flavor, and fiber.
