Gut Healthy Decadent Brownies

Did you know that when you eat black beans your gut bacteria create a large amount of a molecule called butyrate? Butyrate has been shown to help with gut healing and inflammation, and even with insulin sensitivity (aka glucose control). So let’s include more black beans in our life!

Ingredients

1/2 tsp olive oil

3 tbsp semi sweet chocolate chips, chopped

1 tbsp milk (plant or regular)

1 can low sodium black beans (15 oz), rinsed and drained

2 large organic eggs

7 tbsp honey (I used less…did like a 5 second drizzle, but depends how sweet you want it)

1 tbsp balsamic vinegar

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp vanilla extract

1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350F. Line a square cake pan with parchment paper (ideally the unbleached kind), letting edges hang over sides so easy to remove brownies at the end
  2. Melt the semi sweet chocolate chips with the olive oil and milk.
  3. Add black beans and puree into mixture using food processor.
  4. Add eggs, honey, balsamic, baking powder and soda, vanilla and mix together well.
  5. Add optional chocolate chips and mix.
  6. Transfer to pan and bake for around 25 minutes, or until toothpick comes out clean.
  7. Serve alone or with some yogurt and berries!
