Lemon Chia Pudding

Fiber-rich, creamy pudding to help satisfy that sweet tooth!

Ingredients

1 cup nut milk (almond or coconut)

1 tsp lemon zest

1/4 cup fresh squeezed lemon juice

1 tbsp 100% pure maple syrup

Pinch of salt

1/4 cup chia seeds

Blueberries, to serve (optional)

Instructions

  1. In a medium bowl, add the almond milk, lemon zest, lemon juice, maple syrup, and salt. Whisk together. Add the chia seeds and whisk until well combined. Place in the fridge for about 20 minutes. Remove from the fridge and stir again. Cover and place back in fridge for another 2 hours or overnight.
  2. Top with optional blueberries.
  3. Place in an airtight container and store in fridge for up to 7 days.

Note: Make the night before to have as a quick and easy breakfast or a ready-to-go snack option.
